Fewer people know the Oasi di Capparrina: a protected nature reserve right by the sea near Menfi, in south-western Sicily, where the olive trees grow among wild Mediterranean flora. Capparrina has always belonged to the family, who now farm their land in the 17th generation. This oil comes from there, and it has been our personal favourite for years.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003ePicked early, milled straight away\u003c\/strong\u003e\u003cbr\u003eThree Sicilian varieties (Nocellara del Belice, Biancolilla and Cerasuola) are hand-picked from early October, and deliberately so: it costs yield, but brings more freshness and aroma. The mill stands in the middle of the olive grove, so the olives go straight from tree to mill. There the whole fruit is gently washed, crushed, malaxed at low temperature and separated from the pomace in a decanter. On the nose, the typical aromas of the area: fresh grass, green tomato, artichoke and seaweed, framed by fruity notes of citron and exotic woods. It finishes with fresh herbs, basil above all.
