2021 Sankt Margarethen – Chardonnay DAC
Our Chardonnay delights with the luscious flavors of honeydew melon, ripe peach, and subtle hints of caramel and butterscotch. The creamy texture adds a rich, velvety mouthfeel, making each sip a luxurious experience.
Grown on soils of clay, mica schist, and Leitha limestone, our vines thrive in these nutrient-poor, low-rainfall conditions. The vines, up to 36 years old, benefit from gentle pruning and organic compost, ensuring a robust and healthy growth cycle.
Hand-harvested grapes undergo a short maceration period before spontaneous fermentation and malolactic fermentation (BSA) in oak barrels. The wine matures for 12 months on the full lees in 500-liter barrels (tonneaux), followed by 3 months of bottle aging, developing its complex and refined character.
Best enjoyed at an optimal drinking temperature of 8 - 10 °C, this Chardonnay pairs excellently with spicy tofu dishes, poultry, and pasta with light sauces.
