Szent Donát

A 15-hectare estate practices ecological cultivation, gentle processing, short maceration, spontaneous fermentation, and long ageing. The wines express the unique character of Csopak, Tihany, and the Káli Basin.

 

Family Estate

The Kovács family, the current owners, laid the foundations of today's estate in 1994, but their ancestors' connection to vineyards and wine dates back much further. The paternal side of the family has been in Csopak for nearly two hundred years, while the maternal side is connected to the Káli Basin. Both lines have brought with them a love for grapes and wine, as well as the tradition of winemaking.

Of the three siblings representing the new generation, Tamás leads the winery. By 2002, the Csopak estate had reached 3 hectares. The main building, designed in the style of Lake Balaton by Endre Szűcs, and the first part of the underground cellar system were completed. The maturing areas annually produced 8-10 thousand bottles of excellent yield. The wine terrace in front of the cellar has become a summer favourite for many. The winery and the estate are named after the patron saint of Csopak's vineyards, Saint Donát.

Vineyard Location

Their lands are located in Csopak, Tihany, and on the Káli Fekete-hegy (Black Hill). Each of these three Lake Balaton locations has a distinct microclimate and geology. Besides the differing orientation and distance from Lake Balaton, the soils in the vineyards also vary significantly, greatly influencing the character of the wines.

Ecological Viticulture

The human-scale 15-hectare estate size allows for the entire vine cultivation process to be carried out in-house, with a strong emphasis also placed on yield limitation.
