The '"CHE" Chenin Blanc 2023 comes from Sankt Margarethen in the Leithaberg region, where a former Blaufränkisch vineyard was carefully converted to Chenin Blanc. Rooted in limestone soils, the vines are cultivated with a gentle pruning method and nourished with organic compost. The wine was spontaneously fermented in Leithaberg tonneaux, barrique and clay amphora, with 5% whole clusters included, then aged for seven months on the lees before bottling unfiltered.
In the glass, it presents fine floral notes, delicate waxy aromas, citrus fruit and acacia blossom. On the palate it is taut, with precise acidity and subtle tannins that lend depth and structure. This Chenin Blanc pairs beautifully with fish, shellfish or light poultry dishes, while a vegan option such as grilled cauliflower steak with citrus-herb sauce highlights its freshness.
