Age of the Vines
15 years. The vineyards were cultivated as such for centuries but were abandoned in the 1940s. The soils had 6 decades to rest and regenerate.
Fermentation
Spontaneous fermentation in stainless steel tanks, pressed after 18 days, malolactic fermentation in stainless steel tanks and barrels.
Maturation / Aging
13 months in stainless steel tanks and new 500-liter barrels; 12 months in the bottle.
Optimal Drinking Period / Drinking Temperature
2020 – 2024 / 6 – 10°C
